Baked Ziti with pumpkin and Sausage



Ingredients

Nonstick cooking spray
4 cups (12 oz.) dry regular or whole-wheat ziti
1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
2 tablespoons all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
Pinch cayenne pepper
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Fat Free Milk
4 links (12 oz.) fully-cooked Italian-seasoned chicken sausage, cut into 1/4-inch slices
1 pkg. (6 oz.) or about 4 cups pre-washed baby spinach
1 cup (4 oz.) shredded part-skim or 2% milk reduced-fat mozzarella cheese
1/2 cup (1.5 oz.) shredded Parmesan cheese
Directions

PREHEAT oven to 425º F. Spray 4-quart baking dish with nonstick cooking spray.

PREPARE pasta according to package directions. Reserve 1/2 cup pasta cooking water and set aside for later use. Drain pasta; return to cooking pot.

MEANWHILE, COMBINE pumpkin, flour, garlic powder, salt, nutmeg and cayenne pepper in medium skillet over medium heat. Slowly add evaporated milk, stirring until smooth. Cook, stirring occasionally, for 2 to 3 minutes or until mixture begins to thicken slightly. Pour over pasta in pot. Add sausage and reserved pasta cooking water; stir well.

SPREAD half of the pasta mixture into prepared baking dish. Top with spinach. Cover with remaining pasta mixture. Lightly spray piece of foil with nonstick cooking spray. Cover ziti with foil, greased-side-down.

BAKE for 20 minutes or until heated through. Combine mozzarella and Parmesan cheeses in small bowl. Remove foil; sprinkle with cheese mixture. Bake, uncovered, for an additional 5 minutes or until cheese is melted.

Banana-Oatmeal Bread

This is a favorite of my family and so easy:

1 1/4 cups all-purpose flour (I have used wheat too)
1/2 cup unpacked brown sugar
1/2 tsp table salt
1/2 tsp baking soda
1/4 tsp baking powder
1 TBL canola oil

1 large egg beaten
2 egg whites beaten

3 large ripe bananas
1 cup uncooked old fashioned oats

Preheat oven to 350 F. In a large bowl, stir together the dry ingredients. Add oil and eggs, mix thoroughly.

In a smaller bowl, mash bananas with potato masher or fork. Add the bananas and the oatmeal to batter.

Spray a loaf pan with cooking spray. Pour batter into pan and bake until top of loaf is firm to touch, 45-55 minutes. Remove from oven and allow to cool in pan for 5 mins. Flip out and cool on wire rack for additional 10 minutes.


Baked Boneless "Wings"

I'll start this thing off with one of the only recipes I have "written down". When I was on WW, I craved things like boneless wings, but had to resist. So, I made up this recipe and they were pretty awesome! Enjoy! - KW



1 1/3 pound(s) uncooked boneless, skinless chicken breast

1 cup(s) Progresso Panko crispy bread crumbs - plain

1 Tbsp Hellmann's Light mayonnaise

1 tsp chili powder (or to taste)

1 Tbsp Dijon mustard
1 1/2 item(s) egg white(s)

2 tsp unpacked brown sugar

1 tsp dry mustard

2 Tbsp honey

2 tsp garlic powder


Trim chicken breasts and cut into boneless wing size pieces, or strips.
Mix dry ingredients to create flavored breadcrumbs.
Mix Egg, Mustard and Light Mayo.
Dip Chicken Pieces into flour, then egg mixture, then breadcrumbs. Lay on cookie sheet or baking pan, then spray with cooking spray.
Bake at 425 for about 20 minutes (check and bake longer if necessary - Time is based on toaster oven cooking.)
When there are about 4 minutes left, drizzle with 1 T honey. Drizzle second tbsp honey when taken out of the oven.
